My name is Doree and I have a blog called Top Notch Mom. I love to write about food and family. You’ll see that all of my recipes are simple and easy to make. I am a mom to a 19 month old so the less time I can spend in the kitchen and more time I can spend with him is what matters most to me. I am so excited to be sharing my Crock Pot Pumpkin Chili recipe with you on Leslie’s blog! If you don’t have a crock pot, don’t worry; I will show you how to convert this recipe to your stove top instead. Now that the weather is cooling down this the perfect dinner for a chilly fall night ;). This recipe has a 15 minute prep time and then you can set it and forget it until dinner time. Your house will smell amazing once it’s finished!

You will need:

  • 1/2 lb ground beef
  • 1 med onion-chopped
  • 1 red bell pepper-chopped
  • 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 15.25 oz can black beans-drained
  • 1 15 oz can pumpkin puree
  • 1 TSP chili powder
  • 1 TSP cumin
  • 1 TSP cinnamon
  • 1 TBSP hot sauce – add more or less depending on how spicy you’d like it to be
  • Salt & Pepper to taste

Directions:

  1. In a medium pan brown ground beef
  2. Add red peppers and onions and cook 5-8 minutes or until onions are translucent
  3. In a medium crock pot combine diced tomatoes, tomato sauce, black beans, pumpkin, chili powder, cumin, cinnamon and hot sauce
  4. Add the cooked beef, red pepper and onion mixture and mix until combined
  5. Salt & Pepper to taste
  6. Cook on low 6-8 hours or on high for 4 hours

*If you’d like to make this on your stove top you will need a pot. Cut all liquids in this recipe to 1/2 and cook on medium for 45 minutes to an hour.
